Caesar Salad Pizza

So the other weekend we were STARVING but had just gotten back from a vacation and wanted to spend as little money as possible. We literally had 3 things in the fridge… caesar salad kit, frozen chicken breasts, mozzarella cheese (no clue why we had this?), and a frozen cauliflower pizza crust from Trader Joe’s (this is a great thing to keep in the freezer just in case).

Anyways, a salad sounded too light and we kind of wanted something that felt not-healthy… BOOM Caesar Salad Pizza it was.

    

Step one… follow the pizza instructions 🙂 Obviously, you can use any pre-made pizza crust so I won’t go into details.

Once the crust is done, drizzle some olive oil and garlic powder in the middle. Around the crust, sprinkle some Italian seasoning and Trader Joes Everything Bagel Seasoning for flavor. I put this back in the over for about 5 minutes to give the crust an extra crunch.

While the pizza is cooking, grill/cook up your chicken. I don’t have a grill… so this was indoors. I tossed the chicken with some salt and lemon pepper before I started cooking. Cut into bite size cubes then set aside.

    

Sprinkle about a handful of mozzarella cheese in the middle of the pizza and melt down for a couple minutes in the oven. You can definitely add more cheese here.

Once done, put the chicken on the crust then the salad with caesar dressing. I kept the croutons out and sprinkled the parmesan cheese on top. You will not use the whole salad kit here so I just kept the rest as an appetizer salad for Matt because he was starving 🙂

Looks good right? I wanted my pizza all warm and the cheese melted so I put the pizza in the oven one more time for no more than 5 minutes. When I was looking online, I think this step is optional. Some just put the salad on the pizza and call it a day… I liked it cooked through.

Pre-Oven:

Take it out of the oven and you are done!! Very Yummy… enjoy!

  1. Well that certainly looks delicious!! I think it sounds good to put it back in the oven the last time. I’ve seen plenty of grilled romaine Caesars. Really looks great!!!

    Warm, cool, chewy & crunchy, light & filling.
    I think I’ll have mine with a nicely chilled glass of wine.
