“Mac and Cheese” with Crab

This is so good and SO much healthier than real Mac and Cheese. One of my good friends from college was in town so I obviously had to make her some Baltimore Crab… and nothing is better with Baltimore Crab than cheese and Old Bay. Obviously.

So what I did here to make it “healthier”… swapped out roasted cauliflower for the pasta, almond milk for the heavy cream, and greek yogurt for the cream cheese. It is a lot of swaps, but what do you really love about Mac and Cheese? Well, the cheesy goodness. You do not miss the carbs and this cheese mixture is creamy and yummy, I promise! I still use cheddar cheese because you can’t replace everything!

Ok so first.. pre-heat the oven to 400 degrees. While that is pre-heating, douse the cauliflower florets with olive oil, salt, and a very generous amount of Old Bay. Don’t be scared of the Old Bay here, the more the better! These roast for about 30 minutes.

While this is cooking, make the creamy cheese sauce.

In a boiling pot, mix the almond milk and the cheddar cheese together until melted together. Once melted, add in the greek yogurt and stir until everything is blended, melted, and creamy! I threw in some garlic powder and salt here. Taste to see what you want to add…

Now, look at you! Everything is cooked. At this point, chop up your peppers and add everything into your serving dish.

  

Mix it up… and Mac and Cheese!! I am telling you… it is so good.

Ingredients:

One Head of Cauliflower
Olive Oil
Salt
Old Bay Seasoning
Garlic Powder
1/2 C Almond Milk (or regular milk)
1/2 C Plain Greek Yogurt
2 Cups Shredded Cheddar Cheese
1/2 C (or more) Roasted Bell Peppers
1/2 lb Lump Crab (or shrimp if the crab is $$$ and/or hard to find)

  1. I made it and delish! I used shrimp because in Arizona the crab cannot compare
