Shrimp Lettuce Wrap Tacos with Avocado Pineapple Sauce

Ok so I am not going to be modest here… these are really good! Especially on a hot summer day.

This weekend, it was crazy hot, and we were smart enough to go to a golf tournament. We literally walked 8 miles and I got a nasty tan line. Nothing screams fresh seafood tacos more than that kind of a weekend! I served these with a Veggie Ceviche that is amazing in itself. I also have made these with tilapia but I like the shrimp better.

For these tacos, you get all of the greatest things. Pineapple. Avocado. Cilantro. Shrimp. Lime. I actually made too little shrimp… We could have eaten this all night!

BTW the one will need either a hand blender (recommended) or a food processor. Also, there is plenty of sauce so if you are cooking more, no need to add more sauce.

First, you have to do the unfortunate task of peeling and de-vaining the shrimp… sorry 🙁

Once peeled, put the shrimp in a large plastic bag. Add in olive oil, dry ingredients, and 1/4 of the lime. Shut the bag then shake it all up! Extra bonus – no dirty dishes with this step.

Let the shrimp sit while you make the sauce.

While the shrimp is sitting, add all of the other ingredients into a bowl to blend together. Because this is going to be blended, no need to worry too much about chopping pretty. Just make the pieces small enough they will blend up. Once everything is in, blend together until you have a thick, fragrant sauce. SO YUMMY. Feel free to adjust this here, it would be pretty hard to ruin this sauce… everything tastes good!

  

Almost done… now you just need to cook up your yummy shrimpies. Add a bit of olive oil to a pan, once hot, throw the shrimp in! Cook for a couple of minutes (about 10) so they are cooked through. While cooking, cut up your lettuce.

    

Now you are done!

To assemble, I like spreading the sauce on the bottom of the lettuce cups then add the shrimp on top. Delicious. Matt got fancy and added the ceviche on top – big steps! All were yummy.

    

Taco Ingredients:

1/2 Pound Shrimp (or more if you are hungry)

Romaine Lettuce Hearts

Avocado Pineapple Sauce (below)

1/4 TSP Taco Seasoning, Lemon Pepper Seasoning*, Chipotle, Adobo Pepper**, Salt

1/4 of a Lime

1/2 TSP Olive Oil

*Use normal Black Pepper if you don’t have Lemon Pepper

**Double the Chipotle if you don’t have Adobo

Sauce Ingredients:

1/2 Avocado

1/2 Cup Cilantro

3/4 of a Lime

1 Pineapple Spear (about 1/4 cup if chopped)

1 Jalapeno

1 TBS of Red Onion
