Sweet Potato Hash

This is a fan favorite in my household! The pictures don’t look good… because hash’s aren’t really “pretty”…but it is super easy and versatile. Matt has literally told me that if I only make him this he would be so happy.

I also make this about a million different ways depending on my mood, today I did a little smoky with steak. Add a fried egg or two on top… and you have a great meal!

You always need a few things: sweet potatoes, some meat (red is generally better, ground turkey works though), whatever veggies you have in your fridge, and eggs.

You also are going to want a big pan with a lid for this.

First, peal your sweet potato and cut it up into even squares. I used to make this with the skin still on, but I have found peeling them is the best.

While you are cutting, heat up your olive oil in medium/medium-low heat. Once it is hot, throw the potatoes in! Toss the potatoes in salt and pepper. Place the lid on the potatoes and let cook, stirring occasionally.

While those are cooking, cut up your vegetables. I used large mushrooms, a bell pepper, a jalapeño, and garlic. Add into the pan once done. For seasoning I used a BBQ seasoning and a blend from Penzies that I love (Arizona Dreaming).

  

While all of that is cooking, season your steak with salt and pepper. I used a nice small-ish flank steak. Normally, I keep the steak whole to cook it then cut after but we were STARVING… so I cut it into strips first.

Keep cooking until all the potatoes and veggies are cooked through and the steak is done. Put the steak aside so you can use the same pan for the eggs and turn the veggies off or to low. Add a little bit of olive oil to the pan and crack your 4 eggs in there. Cook about 2-3 minutes per side, the longer the less runny.

Put all of the veggies and steak together in a bowl, then add 2 eggs on top each. If you have some avocados, those are great to throw in! Salsa adds a nice touch too if you want some spice.
